Ornate Shrimp Cocktail serves 6

A wonderful cocktail recipe for the summer!

2 Baking sheets, a blender, two large bowls
30 Tiger Shrimp

Marinating sauce:
¼ cup Kosher Salt
¼ cup Sugar
1 cup of Water
2 cups of Ice

Cocktail sauce:
1 can of Diced Tomatoes
½ cup Chili Sauce
4 tbsp Horseradish
1 tsp Sugar
Fresh Black Pepper
½ tsp Kosher Salt
1 tbsp Olive Oil

Mix the shrimp marinating sauce in a bowl. With a sharp knife, make a slice down the length of the back of the shrimp – be careful to keep the shrimp tails intact. Remove the shrimp from their shells. Rinse shrimp under cool water and place into the bowl with marinating mixture. Refrigerate for half an hour.

Blend sauce content in a blender until it is very smooth. Refrigerate until you are ready to serve the cocktails.

Preheat oven on broil (about five minutes). Remove shrimp from marinating sauce and drain well. Rinse shrimp and dry on a bed of paper towels. Toss shrimp in olive oil and place on the cookie sheet. Place in oven under broiler for 2 minutes each side. Transfer to a cold baking sheet and refrigerate until chilled.

Arrange shrimp in a martini/cocktail glass and pour on cocktail sauce. Garnish with tails. Serve immediately.
